Fresh Premium Whole Sea Bass
Whole sea bass with its unmistakable markings — a scatter of jet-black spots across a silver flank, the pattern unique to each fish. The scales sit tight and bright, and the eyes are clear and domed: the signs of a fish that has been handled cold and quickly.
The flesh is white, fine-grained and faintly sweet, and it holds together well enough to be butterflied open (as shown) or cooked whole. Steam it with ginger and spring onion, or pan-sear it skin-side down until the skin crisps.

Origin: coastal waters. Keep frozen at -18°C or below. Cook thoroughly before eating.
